HEAD CHEF HOTEL GALWAY CITY BRASSERIE. Noel Recruitment is seeking a Head Chef for a medium sized but busy property in Galway City. This is an all day operation mainly from 8 am -.9.30 approx. where they serve a busy passing trade as on a main route. Style of food could be classified as Bistro/Brasserie serving 200-500 covers daily so a Head Chef with strong Hands on Kitchen experience is required. Mainly Bar Food & Restaurant but this is with creativity and finesse. Its no Turkey & Ham joint! The client will also look at a strong Sous Chef seeking their first Head Chef Position. Prerequisites for this position include: " Previous Head Chef Experience of minimum of 5 years plus. " Preference for Head Chef from a Restaurant/ Brasserie or Exceptional Hotel. " Bistro/Brasserie/Bar Food type operations. " Strong on Costings, Portion Control & Purchasing. " Fully au fait with HACCP & Food Safety Regulations. " A chef that can bring new ideas, new dishes, new menus, specials to the property. " A chef dedicated to producing wholesome food with great taste and funky presentation. " A problem solver and can think 'outside the box' " Strives for perfection while executing excellent cuisine. " Can manage a large brigade. Salary range of €50K Bonus.
