Sous Chef - Galway City. Duties: To ensure the preparation, cooking and presentation of food to a consistently high standard for customers. To follow approved and agreed recepies and catering requirements. To monitor, check and weigh (where necessary) the quantity and quality of supplies upon delivery so as to ensure that only superior and correct produce is accepted. To attend all meetings as requested. To follow the Recepies Manual including quantities and presentation. To practise the highest standards of personal hygiene at all times in terms of grooming and proper attire. To maintain the required operational hygiene within the kitchen at all times. To ensure that agreed operational specifications i.e. HACCP cleaning schedules are adhered to and checked. To report all incidents and "near misses" immediately to your Manager. To have a complete understanding of policies in respect of catering, health & Safety, general conditions of employment and fire prevention. To comply with ALL requests concerning matters of safety in the kitchen. To always wear the correct attire and use the correct safety equipment. Bring to the attention of your Manager any equipment that is broken or needs attention or to be replaced. To practise economy in the kitchen and to minimise any incidence of over production, excessive use of energy and food spillage due to poor stock control. To order correct stock levels from designated suppliers. To carry out weekly stock take count and submit to Financial Controller. To assist in measures designed to ensure adherence to budget allocation. To undertake such other duties that may be deemed necessary from time to time and may be communicated to you.
